Cheese Puffs

When one hears “Cheese Puffs”, it’s hard not to immediately conjure up a big bag of crunchy Cheetos brand snacks and the resulting orange tongue and fingers. However, there’s much more to cheese puffs besides Chester the Cheetah and his Cheetohs.

Numerous recipes are available for a variety of homemade cheese puff snacks with everything from cream cheese to goat cheese to bacon and more. Here’s one of our favorites:

Hot Sausage and Cheese Puffs

1 lb. hot or sweet Italian sausage
1 lb. sharp cheddar cheese
3 c. biscuit baking mix
3/4 c. water

Remove sausage from casing. Cook in large skillet, breaking up the meat with a fork, until no longer pink (about 8 to 10 minutes). Drain off fat, spoon sausage into large bowl and cool completely. Add rest of ingredients. Mix with fork until well blended.

Roll into 1" balls and place on large cookie sheet 2" apart.

Bake in hot oven, 400 degrees, for 12 to 15 minutes or until puffs are browned. Remove from sheet and cool completely on wire racks. Makes 120 puffs.

To Freeze Ahead:
Freeze in single layer on jelly roll pan. Place in plastic bag when frozen.

To Reheat:
Arrange in single layer on large cookie sheet. Bake at 375 degrees for 10 minutes.
